The Edge Alchemist specializes in premium hand-whetstone sharpening for Japanese chef knives, high-end kitchen cutlery, premium pocket knives, Bowie knives and specialty blades.

Sharpening is not one-size-fits-all.
A quality knife is more than a piece of steel. Its geometry, hardness, grind, steel composition and existing edge all determine how it should be sharpened.
Why Hand-Whetstone?
Powered systems can remove steel very quickly. When used improperly, aggressive removal or excessive heat can alter geometry or compromise a blade. Hand sharpening gives the craftsman direct control over pressure, angle, steel removal, bevel and final edge.
The Goal
A clean, controlled, exceptionally refined edge that performs beautifully while preserving the character and geometry of the blade. The goal isn't simply “sharp.” It is the right edge for the knife.

Examine steel, geometry, edge condition, damage and previous sharpening.
Preparation
Prepare the blade based on what it actually needs—not a generic recipe.
Whetstone
Establish and refine the edge using appropriate stones, pressure and angle.
Refinement
Manage the burr, refine the apex and finish the edge for its intended use.
Final Edge Test
Inspect the finished edge and test it on fine paper to verify a clean, consistent cut.

Every blade receives an approach based on what is actually in front of me. The work is measured in control, patience and attention—not how quickly the knife can be pushed through a machine.

Local Long Island customers can arrange drop-off and pickup by appointment. Packaging instructions are provided before you bring your knife in.
Before You Drop Off
- 1. Clean and dry the blade.
- 2. Completely cover the cutting edge with a guard, saya, sturdy cardboard or multiple secure layers.
- 3. Wrap and secure the knife individually.
- 4. Include your name and phone number.
- 5. Include maker/model, steel type if known, requested work and any chips or damage.
- 6. Never place an exposed blade in the drop box.
Payment
Payment is due when sharpening is completed, before or at pickup.
